Blue cheese dip has been one of my favorite foods for decades. My grandmother would make it as an appetizer for every family gathering and I would, without fail, spoil my appetite for dinner. I now make it every chance I get: holiday party, potluck, birthday, essentially any gathering where there will be other people around to help me eat it! Blue cheese is excellent for making dips. Its intense flavor doesn’t get lost when mixed with other ingredients like onion and celery. This dip goes perfectly with wheat crackers, my favorites are the reduced guilt wheat crisps from Trader Joe’s. And no, it’s not because they have fewer calories or anything. They just taste better and I have no idea why. I’m willing to listen to any theories on this.
Over the holidays, I must have made this at least half a dozen times, whether it was for a holiday party or to fuel me for another full day of cooking at the in-laws. It’s easy enough to throw together for a pot luck, and delicious enough to scoop out and eat with a spoon.

Notes
I recommend serving with Trader Joe's Reduced Guilt Wheat Crisps!
